Today is 17th Sep and it is the 133rd birthday of Michiyo Tsujimura.
Michiyo Tsujimura was the first woman doctor of agriculture in Japan to discover the nutritious components of green tea.

She conducted research under Professor Umetaro Suzuki, who is a doctor of agriculture famous for discovering vitamin B1. After that she conducted a joint research with Seitaro Miura and she identified vitamin C in green tea. This discovery contributed to an increase in the export of Japanese green tea from Japan to North America. From then, Tsujimura continued with her research to discover other components of green tea. In 1929 Tsujimura succeeded in isolating and extracting catechin, a bitter component in green tea. In the following year she also extracted tannin in crystal form and determined its chemical structure, another bitter component in green tea. She earned a doctorate in agriculture from Tokyo Imperial University in 1932.

Green tea has unique taste sensations including umami, astringency, bitterness and sweetness. Green tea also contains various nutritious components that are beneficial to human health.
